Sustainable food
Collective initiative for the transformation of local meat in the Navarrese region of Sakana. After five years of previous work, it enters the start-up phase with the aim of activating the workshop attached to the regional slaughterhouse and strengthening the structure of the sector in the territory. Selected by the Daniel and Nina Carasso Foundation in the Sustainable Food axis, Kalaska seeks to strengthen extensive livestock farming, consolidate a proximity circuit that allows the origin of meat to be identified and improve marketing conditions for local livestock farmers and butchers. The name alludes to the fale kalaska, a traditional cowbell of sheep in the area, a symbol of a production model rooted in the region.
