Daquídarredor

Daquídarredor is a food project that promotes sustainable territorial food systems in the province of A Coruña through the creation of networks between producers, rural houses, markets and local administrations. The initiative, supported by the Daniel and Nina Carasso Foundation, promotes responsible production, local consumption and community exchange of local food, with the aim of boosting the rural economy, strengthening social ties and recovering traditional knowledge and flavours within the Galician territory.

Context and purpose

Daquídarredor is articulated as a territorialized food system that brings together diverse actors to strengthen local chains of production, transformation and consumption of nearby food. The experience is based on the collaboration between local associations, rural tourism networks and municipal administrations to offer answers to the challenge of integrating more closely the productive life of the countryside with consumption habits and tourist experiences in rural contexts.

Spaces and capacities

The project incorporates specific infrastructures for food processing, including collaborative kitchen spaces that allow the production of preserves, juices, bread and other products with sanitary registration, and direct marketing options from small farms. The implementation of a mobile slaughterhouse for poultry and rabbits that meets health requirements and expands the possibilities of marketing meat products in rural contexts is also contemplated.

Activities and markets

Daquídarredor organizes meetings that promote the exchange of knowledge among those who produce, prepare and consume local food. The project participates in markets and fairs, such as the garden and craft market in Bertamiráns, where producers show their products directly to the community and visitors. These activities serve to bring traditional flavours and sustainable food closer to people who stay in associated rural houses or who visit the markets, generating spaces for meeting and dialogue.

Participation and networks

The Daquídarredor network integrates producer associations, rural accommodation linked to tourism networks, local administrations and community agents. The participating rural houses incorporate local food in their offer to guests, accompanied by information on its origin and modes of production, which contributes to making visible the work of producers in rural contexts and to promoting a broader perception of the cultural and social value of food.

Impact and experiences

The collective experience of Daquídarredor reinforces the visibility of local products and stimulates the conscious consumption of local food. The activities developed promote the construction of networks of trust between rural agents, contribute to sustaining the local economy and consolidate sustainable practices that link production, consumption and food culture within the Galician territory.
